How to Make a Cheesecake

When you are eating healthy, it doesn’t mean that you have to give up desserts. You can still indulge in sweet, rich, creamy goodness if you have the right recipes and a few basic dessert-making tricks up your sleeve. And here’s one of our favorites – easy, creamy, low fat, low sugar cheesecake.

Traditional cheesecake is made with several eggs, full-fat cream cheese, sour cream, sugar, butter, and flour. Not the healthiest dish, but delicious. Cheesecakes also take a fair amount of baking skill and an enormous amount of time to prepare. Whipping up a cheesecake on a whim isn’t really an option when they take hours to bake and even longer to chill.

Our creamy, healthy cheesecake is a different matter. Its basic ingredients are fat-free cream cheese, sugar-free pudding mix, and lite whipped topping, all of which are inexpensive and lend themselves to quick preparation. No need to bake this cheesecake; after you mix it, simply let it set in the refrigerator for an hour or so to chill. Best of all, our cheesecake tasted rich, sweet, and delicious, and contains a mere fraction of the calories a traditional cheesecake contains. Seconds, anyone?

In this recipe, am going to show you how to make a tart, tangy key lime cheesecake. It is the perfect cool, refreshing summer treat. Serve it with some sliced strawberries for color zing and extra flavor, and top your servings off with fresh lime slices for a beautiful look.

Low Fat, Low Sugar, Creamy Key Lime Cheesecake

  • 1 package instant sugar-free vanilla pudding mix
  • 1 package sugar-free lime gelatin
  • 1 cup soy milk or skim milk
  • 1 cup artificial sweetener (sucralose, either store-brand or sold under the brand name Splenda, is usually sold in bags large enough to measure out cups)
  • 1 8 oz. package fat free cream cheese, well softened (use Neufchatel cheese if ou can’t find fat free cream cheese)
  • 1 8 oz. Container Lite whip topping
  • 12 whole cinnamon flavored graham crackers a few drops green food coloring (optional)

Combine the pudding mix, gelatin, and the soy or skim milk in a large bowl; use an electric mixer to blend well. Add the sweetener. Add the softened cream cheese and beat with the electric mixer for about a minute and a half. When you’re done, the mixture should be light and fluffy. Thoroughly but gently fold in the lite whipped topping.

Place a layer of graham crackers on the bottom of an 8″ x 8″ pan. Spread half the cheese mixture over the crackers. Repeat the process. Refrigerate for several hours before serving.
