Low Fat, Low Sugar, Creamy Key Lime Cheesecake

  • 1 package instant sugar-free vanilla pudding mix
  • 1 package sugar-free lime gelatin
  • 1 cup soy milk or skim milk
  • 1 cup artificial sweetener (sucralose, either store-brand or sold under the brand name Splenda, is usually sold in bags large enough to measure out cups)
  • 1 8 oz. package fat free cream cheese, well softened (use Neufchatel cheese if ou can’t find fat free cream cheese)
  • 1 8 oz. Container Lite whip topping
  • 12 whole cinnamon flavored graham crackers a few drops green food coloring (optional)

Combine the pudding mix, gelatin, and the soy or skim milk in a large bowl; use an electric mixer to blend well. Add the sweetener. Add the softened cream cheese and beat with the electric mixer for about a minute and a half. When you’re done, the mixture should be light and fluffy. Thoroughly but gently fold in the lite whipped topping.

Place a layer of graham crackers on the bottom of an 8″ x 8″ pan. Spread half the cheese mixture over the crackers. Repeat the process. Refrigerate for several hours before serving.
